1 avocado
1/2 cucumber chopped
1 cup spinach leaves
1/2 cup mint leaves
1 lime, juiced
2 cloves garlic
3 green onions
3/4 cup water
2 tablespoons EVOO
1 tablespoon sugar
salt and pepper to taste
Blend all in blender.
All ingredients are approximate -- so add more or less to taste.
Delicious as a baked potato topping.
